The process starts with a one on one meeting with Jim Kanner, Phillip’s creative leader, to discuss the taste, textural and nutritional goals for your product idea.
Whether it is a new coffee add in or maybe an energy drink, before Jim starts his work in our lab, he researches and formulates with pen and paper. During the research phase, Jim can often be found in the local ice cream and coffee shops tasting products while writing mathematical equations for his formulation.
A recipe written for a small quantity might be a success, but scaling up a production recipe introduces a new set of challenges. “As I’m writing a formula, I consult with our manufacturing team ... the production cooks that work with our equipment daily. We talk about process, cook time and other variables that are critical to successful production.”
